Ingredients

PEANUT BUTTER FROSTED COOKIE DONUTS

  • 1 cup almond flour
  • 2 tbsp gluten free flour (all purpose)
  • 2 tbsp zero calorie sweetener
  • ½ scoop Quest Vanilla Milkshake protein powder
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • 1 egg white
  • 2 tbsp peanut butter, natural
  • 2 tbsp 0% greek yogurt

Frosting

Method

  1. Preheat the oven to 350 F and prepare a 2.5” donut pan with non-stick spray.
  2. In a bowl, combine the flours, sweetener, protein powder, baking powder, baking soda and salt.
  3. In another bowl, whisk together the egg, egg white, peanut butter and yogurt until combined.
  4. Add the dry ingredients to the wet and stir until a batter forms and no dry spots remain.
  5. Transfer the mixture to a piping bag and fill 7 donut cavities.
  6. Bake the donuts for 16-18 minutes.
  7. Once cooled, melt the chocolate and coconut oil together until smooth.
  8. Dip each donut into the chocolate and top with chopped Quest Frosted Peanut Butter Cookie pieces.
