
My current hyper-fixation meal is this easy fridge salad…
The other day, my friend Maddy whipped up some Mediterranean couscous. She’s the kind of person who peeks into the cupboard and takes a little of this and a little of that, and suddenly you’re eating the best thing you’ve tasted in years. (Are you an intuitive cook, too? I find it really fun to watch.)
We now have a giant bowl of this couscous in our fridge, and I’ve been having it every day for lunch. The boys love it, too. It is, as they say, infinitely riffable, so you can add whatever toppings you’d like.
Mediterranean Couscous
8 lunch servings
extra virgin olive oil
16 oz pearl couscous
Better Than Bouillon (optional, skip to make it vegan/vegetarian)
1 shallot
1 lemon
pint of cherry tomatoes
6 Persian cucumbers
2 red bell peppers
red onion
avocado
rotisserie or grilled chicken (optional, skip to make it vegan/vegetarian)
fresh dill
dried oregano
pinch of cinnamon
salt and pepper, to taste
Warm a bit of oil in a pot, then add the couscous, toasting the grain until lightly toasted. Add 2.5 cups of water and about 2 teaspoons of Better Than Bouillon (optional). Stir occasionally until water is absorbed and couscous is tender, adding more water as necessary.
Meanwhile, thinly slice 1 shallot and place into a small bowl. Squeeze the juice of one lemon over shallot slices to marinate.
Next, chop tomatoes, cucumbers, bell peppers, red onion, avocado, and chicken and put in a large mixing bowl.
Once couscous is cooked, add to the large bowl of chopped veggies. Add a glug of olive oil and season with dill, oregano, and a pinch of cinnamon (trust us on this!).
Add the shallot and lemon juice to the bowl, and season with salt and pepper to your liking.

Goat cheese
Crushed red pepper
Capers
Olives
Cornichon
Sliced radishes
Grated carrot
Corn
Roasted vegetables
Chickpeas
Black beans
Dollop of hummus
Croutons
