Ingredients
STRAWBERRY MILKSHAKE MUFFINS
- 3 cups almond flour
- 2 tbsp tapioca flour
- ¼ cup zero calorie sweetener
- 1 tsp baking powder
- ¼ tsp salt
- 3 eggs
- 1 cup Quest Strawberry Protein Milkshake
- ½ cup sour cream
- 1 tsp vanilla extract
- 3 large strawberries, sliced
Icing:
Method
- Preheat the oven to 350 F and prepare a standard muffin pan with parchment liners.
- In a bowl, stir together the flours, sweetener, baking powder and salt.
- In another bowl, whisk together the eggs, Protein Milkshake, sour cream and vanilla.
- Add the dry ingredients to the wet and stir until combined.
- Divide the batter between 16 cupcake liners, top with a strawberry slice and bake the cupcakes for 25-28 minutes and cooked through. Let cool.
- Once cooled, stir together the icing and drizzle over each muffin.
