Ingredients
LEMON FROSTED COOKIE DONUTS
- ¼ cup zero calorie sweetener
- 1 tbsp lemon zest
- 2 eggs
- ¼ cup melted butter, slightly cooled
- 1 tbsp almond milk
- 1 tsp vanilla extract
- 1 tsp lemon extract
- 1 cup almond flour
- 2 tbsp tapioca flour
- ½ scoop Quest Vanilla Milkshake Protein Powder
- 1 tbsp baking powder
Frosting:
Method
- Preheat the oven to 350 F and prepare a standard silicone donut pan with non-stick spray.
- In a mixing bowl, add the sweetener and zest. Use your hands to rub the zest into the sweetener granules.
- Add in the eggs, melted butter, milk and extract and whisk to combine.
- In another bowl, stir together the almond flour, coconut flour, protein and protein powder.
- Add the dry ingredients to the wet and whisk until no dry spots remain. Distribute the batter between 7 cavities and bake the donuts for 20-24 minutes. Let cool.
- For the glaze, stir together the milk and oil and then whisk in the protein powder until you get a glaze consistency.
- Drizzle glaze over each donut and top with Lemon Frosted Cookie pieces and serve.
