Ingredients
COOKIE & CREAM COOKIE CAKE
- 2 Quest Cookies & Cream Quest Bars
- ¼ cup almond milk
- 2 ½ cups almond flour
- ⅓ cup zero calorie sweetener
- ½ tsp baking soda
- ¼ tsp salt
- ⅓ cup melted butter
- 2 eggs
- 1 tbsp multi colored sprinkles

Method
- Preheat the oven to 350 F and prepare a 10-inch oven safe skillet with non-stick spray.
- Break the Quest Bars into small pieces and place them into a medium microwave safe bowl with the almond milk.
- Cook on high for 40 seconds. Stir until well blended and most of the bar is melted into the milk. Set aside to cool.
- Once cooled, whisk in the eggs and melted butter.
- In another bowl, stir together the almond flour, sweetener, baking soda and salt.
- Add the dry ingredients to the wet and use a rubber spatula to stir until a dough comes together.
- Press the dough evenly into the prepared skillet and top with sprinkles. Bake for 26-28 minutes and golden brown. Let cool.
- Whisk the heavy cream until stiff peaks form. Mix in the protein powder and then transfer to a piping bag with a star tip.
- Decorate cookie cake and top with sprinkles and crushed cookies if desired.
- Cut the cake into 14 slices and serve.
