Method
- Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
- Place the eggs in a shallow bowl and the crushed chips and gluten free flour in their own shallow bowls.
- Peel the onion and trim about ½ inch off the top.
- Flip the onion upside down and starting about ½ from the root make 8 even cuts and the onion and then a cut between each of those to create “petals”.
- Carefully flip the onion over and separate the layers.
- Place the onion into the flour bowl and cover with flour.
- Next add the onion to the egg bowl and use a brush to evenly coat the onion, getting between all the layers.
- Carefully transfer the onion to crushed chip bowl and spoon the chips over the onion.
- Return to the egg bowl and repeat a second time.
- Transfer the onion to the baking sheet and bake for 15-20 minutes.
- Serve with your favorite dipping sauce.
