Ingredients

Method

  1. Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
  2. Place the eggs in a shallow bowl and the crushed chips and gluten free flour in their own shallow bowls.
  3. Peel the onion and trim about ½ inch off the top.
  4. Flip the onion upside down and starting about ½ from the root make 8 even cuts and the onion and then a cut between each of those to create “petals”.
  5. Carefully flip the onion over and separate the layers.
  6. Place the onion into the flour bowl and cover with flour.
  7. Next add the onion to the egg bowl and use a brush to evenly coat the onion, getting between all the layers.
  8. Carefully transfer the onion to crushed chip bowl and spoon the chips over the onion.
  9. Return to the egg bowl and repeat a second time.
  10. Transfer the onion to the baking sheet and bake for 15-20 minutes.
  11. Serve with your favorite dipping sauce.
